Mmmmm chocolate!

Last night, a few of us sampled some insanely good chocolate that I had purchased at the Boulder Book store. We tend to sample some amazing chocolates, but occasionally there is one that stands out as exceptional. This was one of those cases. The company is called Ginger Elizabeth Chocolates, and this woman knows how to balance flavor. In the past, we have tried some chocolates where either the flavorings were too strong, too weak or there was too much sugar. This was the case with one local chocolate company, except for the peppermint flavor. In that case, I think the peppermint cut the taste of the sugar. With Ginger Elizabeth chocolate bars, the flavors are so perfectly balanced that one ends up being completely blown away. In the case of the crispy coconut kafir lime bar, the flavor of the lime is just right. Most other citrus chocolate bars are like taking a spray of citrus furniture police to the mouth and following it with a hershey’s kiss. This is not the case with this bar. The lime is subtle and builds while never overpowering the chocolate flavor. By the way, when opening the package, be prepared to be knocked off you feet with the most wonderful chocolate aroma ever. The crunch of the coconut is spectacular, and everything combines for a gastronomic orgy in the mouth.

We also tried the vanilla bean almond toffee bar. I admit I made an error I am always cautioning other to avoid. We went with the milk chocolate before the dark. Usually when this happens, the dark chocolate ends up tasting a bit bitter. However, despite the error, we could all see that the dark chocolate was also nicely balanced. The key with this bar is to eat the entire square of chocolate, not bite a small piece off the edge. There are large chunks of almonds that are toasted to perfection, and I missed that with my first bite. Once my tooth found the almond on the second bite, I knew that I was in for a treat. I have a sensitive palate when it comes to nuts (ok quit laughing), and too often companies use rancid nuts. The bar we sampled was definitely fresh, and the nuts were clearly as far from rancid as possible. Everything about these bars was extraordinary. I would highly, highly recommend this company to anyone who wants good quality chocolate. Damn, that was excellent.
